Mexican Stuffed Peppers

Hey everyone! If if you follow me over on Instagram i’m sure you remember me posting about these mexican stuffed peppers. I had quite a few requests for a recipe and I have finally been able to get them up for you all to make! These peppers are actually fairly easy and don’t require a whole lot of time to make, but look like you took the time to make something special which is always a bonus 😉 and they are so delicious!

Ingredients: serves 7

  • 7 bell peppers
  • 2 packages of ground turkey
  • 1.5 cups brown rice
  • 1 yellow onion
  • 1 cup black beans
  • 1 cup corn
  • Cheddar cheese to sprinkle on top
  • 3 tablespoons Taco Seasoning
  •  2 cups Salsa
  • Sour cream
  • Hot sauce (optional)


  • Preheat Oven to 350
  • Cut peppers in half & shell out seeds, once cut and prepped put into oven for 15mins and then take out and set aside
  • Start cooking rice
  • Start cooking ground turkey and add taco seasoning, add finely chopped onion once cooked and saute
  • Once rice is cooked add to the turkey and throw in your black beans and corn
  • Add salsa and hot sauce to the rice and turkey mix
  • Start using rice and turkey mix and stuff into peppers
  • Sprinkle with cheddar cheese on top
  • Put stuffed peppers back into oven until cheese is melted and peppers are a desired level of softness (about 10mins)
